We all love our kids, but we also know how much time and energy it takes to keep up with them. Mornings are busy and hectic and dinner plans are the last things on our mind. The answer is actually pretty simple-- MEAL PREPPING!
Now that we covered that, here are some ideas for you and your kids to get your whole family meal prepping for the week!
B R E A K F A S T
We like to keep breakfast nice and simple so getting kids on the bus in the mornings can stay hassle free. There are so many easy grab & go breakfast foods, only some of which include egg bites, powerbites, and overnight oats!
Made these beauties yesterday!! Power bites, made with 1 cup of my homemade almond butter, 1-2 cups organic gluten free oats, 1/2 unsweetened coconut flakes, 1/4 cup cacao nibs, 1/4 cup organic raw honey, 1 scoop of vanilla protein powder (I use P96 from Plexus) squash all together with your hands till it's all mixed then form into balls and stick in the fridge. Overnight oats In a jar or container add: • 1/2 cup oat meal • 1/2 cup soy milk • 1 Tbsp of maple syrup • 2 drops of vanilla extract • Pinch of salt • Cinnamon to taste • Your choice of fruit (Today I did blueberries) Optional: Add chia seeds for: -More protein -Omega 3 -Fiber -Calcium, iron, magnesium Put all ingredients in your jar or container, give a good stir and put in the fridge. Enjoy the next morning! This is seriously delicious. As kids get older, they try to be more and more independent. Keeping that in mind, this lunch is a super simple kid-friendly introduction to meal prepping they can pretty much do on their own! Our oldest girls Aliana and Sophia have been home for the past THREE weeks... I needed them to get back into “school week mode” before school actually starts so we started with lunch of course. I let them pick for themselves and I can tell they’re learning a lot from their mom. Seriously, as they get older they become more and more my inspiration to take care of myself too and that’s coming from these little adults. Age doesn’t really matter when it comes to lessons being learned. You’d be amazed what a little kid could teach you. #mealprepmondays @planetbox
